Method
Cocktail
- 1
Prepare glass (optional salt rim)
If you want a salted rim, rub the lime wheel around the outside edge of a chilled rocks glass then dip the outer rim into a shallow dish of flaky sea salt. Set the glass aside. (Salt is optional because it accentuates tequila but can mute delicate citrus.)
- 2
Combine ingredients
Add the reposado tequila, añejo tequila, fresh lime juice, agave syrup, orange curaçao, and aromatic bitters into a cocktail shaker.
- 3
Add ice and shake
Add a generous amount of ice to the shaker (about 1 cup). Secure the lid and shake vigorously for 12–15 seconds, until the outside of the shaker is very cold and slightly frosted.
- 4
Strain and serve
Double-strain the cocktail into the prepared chilled rocks glass over one large ice cube or a few large ice cubes. Double-straining (using a Hawthorne and fine mesh) removes small ice shards and pulp for a smooth texture.
- 5
Garnish
Express the lime wheel over the drink by pinching it to release oils, then drop it into the glass on top of the ice. If you skipped salting the outer rim, you can sprinkle a small pinch (about 1/8–1/4 tsp) of flaky sea salt on top of the ice for a bright contrast.
