Prepare aromatics
Heat 2 tablespoons vegetable oil in a large skillet over medium heat until shimmering. Add the sliced onion and sauté 4–5 minutes until softened and translucent. Add the minced garlic and cook 30 seconds until fragrant.

Build the tinga sauce
Stir in the minced chipotle, tomato sauce, and 1/4 cup broth. Add dried oregano, ground cumin, apple cider vinegar, salt, and black pepper. Bring the mixture to a gentle simmer and let it reduce 3–4 minutes so the flavors concentrate.

Combine with meat
Add the shredded cooked beef or chicken to the skillet and toss to coat thoroughly in the sauce. Reduce heat to low and simmer 5–7 minutes, stirring occasionally, until the meat is heated through and the sauce is slightly thickened. Taste and adjust seasoning (add up to 1/4 teaspoon more salt or more chipotle for heat). Keep warm while you prepare shells.

Fry and shape tortillas
Working in batches, warm one corn tortilla in the hot oil for about 8–12 seconds per side until pliable and lightly blistered. Using tongs, fold the tortilla in half and hold it folded in the hot oil for another 10–15 seconds to crisp the hinge, then press the open edges briefly so the tortilla starts to form a taco shell shape. Transfer to a paper-towel-lined rack or place upright in a taco rack to drain. Repeat with remaining tortillas. Keep oil temperature steady; adjust heat as needed.

Make cheesy interior (optional but recommended)
If you want a melted cheese lining (classic crispy cheesy taco), heat a separate nonstick skillet over medium. Place a tortilla flat in the pan, sprinkle about 1/4 cup shredded cheese evenly over half the tortilla, fold the tortilla over the cheese and press gently. Cook 1–2 minutes per side until the cheese melts and the tortilla is golden and slightly crisp. Transfer to a paper towel and then fold into a shell shape while warm. Repeat for desired number of tacos.

Assemble tacos
Fill each fried shell with about 3 tablespoons (roughly 1/4 cup) of the warm tinga meat. If you prepared cheesy interiors, use those as the base so each taco has melted cheese inside. Top with shredded lettuce, diced tomato, diced onion, a drizzle of sour cream or crema, chopped cilantro and a squeeze of lime. Add hot sauce or salsa to taste.

Arrange toppings in small bowls for assembly. Sprinkle chopped cilantro and lime wedges over finished tacos. Serve immediately so shells remain crisp.
