Make the roux
Add the flour to the butter and oil and whisk constantly. Continue cooking, stirring and scraping the bottom with a wooden spoon, for 12–20 minutes until the roux reaches a deep peanut-butter to chocolate color. Adjust heat as needed to prevent scorching. This darker roux gives the gumbo its characteristic flavor.

Once the roux is the desired color, immediately add the diced onion, green pepper, and celery. Stir to coat the vegetables in the roux and cook 6–8 minutes until softened and translucent. Add the minced garlic and cook 30–45 seconds until fragrant. Stir in the tomato paste and cook 1–2 minutes to remove raw flavor.

Slowly pour in the chicken stock while stirring constantly to combine the roux into the liquid and prevent lumps. Add the diced tomatoes with their juices, bay leaves, Worcestershire sauce, hot sauce, cayenne, dried thyme, black pepper, and salt. Bring to a gentle simmer, then reduce heat to low and simmer uncovered 25–30 minutes to develop flavor and slightly thicken.

While the base simmers, slice the andouille sausage and, if using, peel and devein the shrimp. Pick through the crabmeat to remove any shell fragments and keep lumps intact as much as possible.

After the gumbo base has simmered 25–30 minutes, add the sliced andouille. Simmer 8–10 minutes to allow the sausage to release flavor.

Add the shrimp (if using) and simmer 3–5 minutes until pink and cooked through. Gently fold in the lump crabmeat in the final 2–3 minutes—cook just long enough to warm the crab without breaking up the lumps. Taste and adjust seasoning with salt, pepper, or additional hot sauce/cajun seasoning as needed.

Stir in the Cajun or Creole seasoning and, if using, remove the pot from heat and sprinkle in the filé powder to thicken slightly and add distinctive flavor. If you prefer not to use filé, simmer a few extra minutes to reach desired thickness. Discard bay leaves before serving.

Leftovers: Cool to room temperature, then refrigerate in an airtight container up to 3 days. Reheat gently on the stovetop; add a splash of stock or water if the gumbo thickens too much. Note: If refrigerated, gumbo often thickens — thin with stock or water and rewarm slowly.
