Prepare shaker
Chill a rocks glass or old-fashioned glass by filling it with ice and setting aside. Fill a cocktail shaker with the measured ice cubes (about 6 cubes).

Combine ingredients
Add 2 oz Clase Azul Reposado, 0.75 oz fresh lime juice, 0.5 oz agave syrup, 0.5 oz orange liqueur, and 2 dashes orange bitters to the shaker.

Shake
Seal the shaker and shake vigorously for 10–15 seconds until the outside of the shaker is frosty and well-chilled (this dilutes and cools the mixture properly).

Strain
Double-strain (using a Hawthorne and fine-mesh strainer) the shaken cocktail into the prepared rocks glass over the large ice cube to remove shards of ice and citrus pulp.

Flame orange peel
Hold the orange peel (skin side facing a flame) about 6 inches above the glass. Quickly fold the peel away from your face, and using a lighter or match, briefly express the peel over the flame so a spray of orange oil passes through the flame and onto the surface of the drink — a quick flaming will add a warm, aromatic top note. Rub the peel around the rim if desired.

Finish
Arrange the flamed orange peel on top of the large ice cube and add a lime wheel or wedge on the rim. Serve immediately.
