Chocolate Cookie Crust

Mexican Caramel (Cajeta-style)

Cinnamon-Spiked Dark Chocolate Sauce

Method

    Preheat oven to 325°F (160°C). Lightly grease a 9-inch (23 cm) springform pan. Place chocolate sandwich cookies in a food processor and pulse until they become fine crumbs. If you don't have a processor, place cookies in a heavy resealable bag and crush with a rolling pin until fine.

    In a medium bowl, combine the cookie crumbs, melted butter, granulated sugar, and kosher salt. Mix until the mixture holds together when pressed between fingers. Press the crumb mixture firmly and evenly into the bottom (and about 1/2 inch up the sides, if desired) of the prepared springform pan, using the bottom of a measuring cup to compact the crust. Chill in the refrigerator while preparing the filling (about 15 minutes).

    For a firmer crust, bake crust for 8 minutes in the preheated oven. Allow to cool slightly before adding filling. If you prefer a softer crust, skip baking and proceed chilled.

Velvety Cheesecake Filling

    Warm and prepare ingredients

    Reduce oven temperature to 300°F (150°C) if you baked the crust; otherwise set oven to 300°F (150°C) now. Bring the room-temperature cream cheese fully to room temp (soft but not warm) to avoid lumps. Pre-measure sour cream, milk, eggs, and yolk.

    Beat cream cheese

    In a large mixing bowl, beat the room-temperature cream cheese on medium speed with a hand mixer or stand mixer fitted with the paddle attachment until smooth and creamy, about 2-3 minutes. Scrape down the bowl sides.

    Add sugars and salt

    Add the granulated sugar, brown sugar, and fine sea salt. Beat on low speed until incorporated, about 1 minute, then increase to medium and beat another 30 seconds until the mix is smooth.

    Incorporate sour cream and liquids

    Add sour cream, whole milk, and vanilla extract. Beat on low speed until smooth and homogenous, scraping the bowl as needed.

    Add eggs gently

    Add whole eggs one at a time on low speed, mixing until each is just incorporated. Add the extra yolk last and mix on low until smooth. Do not overbeat — avoid incorporating excess air which can cause cracking.

    Assemble and prepare water bath

    Pour the filling over the chilled crust and smooth the top with an offset spatula. To minimize cracking, tap the pan gently on the counter to release any large air bubbles. Wrap the outside of the springform pan with a double layer of heavy-duty foil to seal (for a water bath). Place the wrapped springform pan in a large roasting pan. Pour hot water into the roasting pan until it reaches about halfway up the sides of the springform pan (careful not to splash water into the cake).

    Bake slowly

    Bake at 300°F (150°C) for 50–65 minutes, or until the edges are set and the center still slightly jiggles when gently shaken. Total time depends on oven and pan; begin checking at 50 minutes. Avoid overbaking.

    Cool gradually

    Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for 30 minutes to reduce shock. Remove from the water bath, unwrap foil, and run a thin knife around the edge of the cake to loosen it from the pan to prevent cracking as it cools. Cool to room temperature on a wire rack, then refrigerate at least 6 hours or overnight for best texture.

Mexican Caramel (Cajeta-style)

    Stovetop method (direct caramel)

    In a small heavy-bottomed saucepan over medium-low heat, combine sweetened condensed milk, butter, and brown sugar. Stir constantly with a heatproof spatula to avoid scorching. Bring to a gentle simmer, then reduce heat to low and cook, stirring frequently, until the mixture thickens, darkens to a caramel color, and reaches about 220°F (104°C) on a candy thermometer or thick ribbon stage, about 12–18 minutes. Stir in vanilla, dried cinnamon and a pinch of kosher salt. Remove from heat and cool slightly. If you prefer a smoother, more concentrated cajeta, cook a bit longer until thicker.

    Alternative oven method (safer)

    Place an unopened can of sweetened condensed milk in a deep baking dish and cover with hot water (water should be at least 1 inch above the can). Bake at 425°F (220°C) for 1 1/2 to 2 hours, checking and topping up water so can remains submerged; the condensed milk will darken to a thick caramel. Let can cool completely before opening, then stir in butter, brown sugar, vanilla, cinnamon, and salt to finish. Use caution with hot can.

    Cool before using

    Let the Cajeta cool to warm or room temperature before drizzling over the chilled cheesecake so it spreads evenly without melting the filling.

Cinnamon-Spiked Dark Chocolate Sauce

    Heat cream and spices

    In a small saucepan, heat heavy cream over medium heat until it just begins to simmer (small bubbles at the edge). Remove from heat and whisk in ground cinnamon and a pinch of sea salt.

    Melt chocolate

    Place the chopped dark chocolate in a heatproof bowl. Pour the hot spiced cream over the chocolate and let sit for 1 minute to soften. Add butter and corn syrup, then whisk gently until the mixture is glossy and smooth. If needed, place bowl over a barely simmering water bath and stir until fully melted and shiny.

    Adjust and cool

    Taste and adjust salt or cinnamon if desired. Let the sauce cool slightly to thicken to a pourable but not runny consistency. Warm slightly before serving if it becomes too stiff.

Finishing & Serving

    Unmold and plate

    Remove the chilled cheesecake from the refrigerator and carefully remove the springform ring. Place cheesecake on a serving plate.

    Drizzle sauces

    Spoon or drizzle a generous ribbon of Mexican caramel (cajeta) over the center of the cheesecake, allowing some to run toward the edges. Drizzle the cinnamon-spiked dark chocolate sauce in a complementary pattern. If desired, create a thin swirl where the sauces meet for a marbled effect.

    Garnish

    Sprinkle a pinch of coarse flaky salt over the caramel for contrast. Scatter toasted chopped pecans or almonds around the top edge if using. Add a dollop of whipped cream per slice when serving, if desired.

    Slice with a hot, dry knife (dip in hot water and wipe dry between cuts for clean slices). Serve chilled. Store wrapped in the refrigerator for up to 4 days; keep sauces refrigerated separately and rewarm gently before using.
