Prepare Spinach & Aromatics

Cook shallot and garlic
Heat 1 tablespoon olive oil in a medium skillet over medium heat. Add the minced shallot and cook, stirring, until softened and translucent, about 2–3 minutes. Add the minced garlic and cook for 30–45 seconds until fragrant, taking care not to brown.

Add spinach
Add the spinach to the skillet in batches if necessary. Cook, stirring, until wilted and any excess water has evaporated, about 3–5 minutes. If using frozen spinach, ensure it is well drained before adding and cook just to heat through. Transfer spinach mixture to a fine mesh sieve or clean kitchen towel and press out as much liquid as possible. Let cool slightly, then chop coarsely.
Make the Dip Base

Soften and combine cheeses
In a large mixing bowl, add the softened cream cheese, sour cream, and mayonnaise. Beat with a hand mixer or whisk until smooth and homogenous, about 1–2 minutes.

Add brie and seasonings
Fold in the small pieces of brie; if you prefer a smoother texture, warm the brie briefly in the microwave (10–15 seconds) to help it incorporate, then stir. Add grated parmesan, Dijon mustard, Worcestershire sauce, lemon zest, lemon juice, hot sauce (if using), salt, and black pepper. Mix until evenly distributed.

Incorporate spinach
Fold the cooled, well-drained chopped spinach into the cheese mixture until evenly combined. Taste and adjust seasoning, adding up to 1/2 teaspoon more salt or a squeeze more lemon juice if desired.
Add Crab & Finish

Gently add crab
Gently fold the jumbo lump crab meat into the dip, taking care not to break up the lumps too much. Reserve a tablespoon of crab for topping if you want a pretty finish.

Transfer to baking dish (optional warm serving)
Preheat oven to 350°F (175°C) if serving warm. Spoon the dip into a shallow ovenproof baking dish (about 1 to 1.5 quart). Sprinkle reserved crab on top, then lightly dust with smoked paprika. Bake for 12–15 minutes until warmed through and edges are bubbling. If you prefer a cold dip, skip the oven step and chill for 30 minutes to let flavors meld.

Garnish
Remove from oven if warmed. Sprinkle chopped fresh parsley over the top and finish with a light drizzle of olive oil and an extra crack of black pepper. Serve immediately with toasted baguette slices or pita chips and lemon wedges on the side.
