    Sort and rinse

    Spread the dried black beans on a clean work surface or large plate. Remove any small stones or damaged beans. Transfer to a colander and rinse thoroughly under cold running water.

    Place rinsed beans in a large bowl or pot and cover with 6 cups of water. Let soak 1 hour at room temperature (quick soak). For an overnight soak, cover and refrigerate 6–8 hours. Drain and rinse after soaking.

    Simmer the beans

    Transfer the drained beans to a large pot. Add 6 cups of fresh water or low-sodium vegetable broth and one bay leaf. Bring to a gentle boil over high heat, then reduce heat to maintain a low simmer. Skim any foam from the surface with a spoon during the first 5–10 minutes.

    Cook until tender

    Cover partially with a lid and simmer gently for 60–90 minutes, stirring occasionally and checking liquid level. Add more hot water as needed to keep beans submerged. Start testing for doneness at 60 minutes; beans should be tender but not falling apart. Remove and discard bay leaf.

    Sauté aromatics

    While beans simmer, heat 2 tablespoons olive oil in a large skillet over medium heat. Add the diced onion and sauté 6–8 minutes, stirring occasionally, until soft and translucent. Add the diced green bell pepper (if using) and cook 3–4 minutes more. Add the minced garlic and cook 30–45 seconds until fragrant, taking care not to burn the garlic.

    Combine with beans

    When the beans are almost tender (about 10–15 minutes before desired doneness), stir the sautéed aromatics into the simmering pot of beans, distributing evenly. Continue simmering together so flavors meld.

Seasoning & Finishing

    Season

    About 10–15 minutes before beans are fully cooked, stir in the ground cumin, dried oregano, smoked paprika, salt, black pepper, and the optional adobo or chipotle if using. Taste and adjust seasoning as the beans finish cooking. Note: avoid adding salt at the very start of cooking; salting toward the end helps beans soften properly.

    Finish and brighten

    When beans are tender and the cooking liquid has thickened slightly (or to your desired consistency), remove from heat. Stir in fresh lime juice and chopped cilantro if using. If the beans are too thin, simmer uncovered for a few minutes to reduce the liquid; if too thick, add a splash of hot water or broth. Adjust salt and pepper to taste.

    Serve warm as a side, over rice, in tacos, or blended for dips. Cool to room temperature and refrigerate in an airtight container for up to 4–5 days, or freeze in portions for up to 3 months.
