Preheat and wash
Preheat the oven to 425°F (220°C). Scrub the potatoes under running water with a vegetable brush to remove any dirt. Pat them dry thoroughly with a clean towel.

Poke and oil
Using a fork, prick each potato 6–8 times evenly around to allow steam to escape. Place the potatoes on a baking sheet. Rub each potato all over with olive oil, then sprinkle with kosher salt and the freshly ground black pepper, coating evenly.

Arrange the oiled potatoes on the baking sheet with space between them so air can circulate. Bake in the preheated oven for 45–60 minutes, depending on size, until the skins are crisp and a paring knife or skewer inserts easily into the center (internal temperature ~210°F / 99°C). For extra-crispy skins, after 40 minutes, turn the oven to broil for 2–4 minutes while watching closely.

Split and fluff
Remove the potatoes from the oven and let rest 5 minutes. Place a potato on a cutting board, make a lengthwise cut about three-quarters of the way through the top, then squeeze the ends toward each other to open the potato. Use a fork to fluff the flesh and season lightly with the 1 tsp salt and 1 tsp black pepper reserved for seasoning the flesh.

Top and serve
Top each potato with 1 tablespoon butter (melted into the hot flesh), a generous spoonful of sour cream, a sprinkle of shredded cheddar, crumbled bacon, and sliced chives. Serve immediately while hot.
