Fries Base
Cook fries
Preheat oven to 425°F (220°C) if baking. Spread frozen fries in a single layer on a baking sheet lined with parchment; toss with 2 tbs oil, salt, and pepper. Bake 20–30 minutes, turning once, until crisp and golden. (If frying, heat 2–3 cups oil to 350°F and fry in batches 3–4 minutes until crisp; drain on paper towels and season immediately.) Transfer fries to a large oven-safe platter or sheet pan for topping.

Marinate and cook protein
Pat your chosen protein dry and place in a bowl. Add fajita seasoning, lime juice, and 1 tbs olive oil; toss to coat and let sit 10 minutes while fries cook. Heat a large skillet over medium-high heat. Add a thin film of oil if needed. For beef: add sliced steak in a single layer and sear 1–2 minutes per side until browned and medium-rare to medium. For chicken: cook slices 3–4 minutes per side until cooked through and no longer pink (internal temp 165°F/74°C). Remove protein to a plate and let rest 2–3 minutes, then slice/if necessary cut into bite-sized strips. Keep warm.
Ghost Pepper Cheese Sauce
Finish cheese sauce
Lower heat to low. Whisk in 2 oz cream cheese until melted and smooth. Stir in shredded cheddar and monterey jack a handful at a time, stirring until fully melted and the sauce is smooth. Add 1/2 tsp ghost pepper hot sauce (start small — adjust to heat preference), 1/4 tsp smoked paprika, 1/4 tsp ground mustard, 1/2 tsp kosher salt, and 1/4 tsp black pepper. Taste carefully and adjust ghost pepper level in 1/8 tsp increments if you want more heat. Keep sauce warm on very low heat, stirring occasionally so it doesn't separate.
Assembly & Garnish
Layer and melt
If fries are on an oven-safe tray, spoon half the cheese sauce over fries, scatter the cooked fajita beef or chicken evenly, then drizzle remaining cheese sauce over the top. If using a separate platter, arrange fries, spoon sauce and protein evenly. For an extra melty finish, place assembled fries under a preheated broiler 1–2 minutes to bubble the cheese (watch closely to avoid burning).
Add toppings
Scatter jalapeño slices, diced tomato, black beans (if using), sliced green onions, and pickled red onions over the hot cheese and protein. Dollop or drizzle sour cream/c crema and sprinkle chopped cilantro and cotija if using. Serve immediately with lime wedges on the side.
Safety & serving notes
Ghost pepper ingredients are extremely hot — clearly inform diners and provide extra sour cream or milk-based dips to tame heat. Adjust ghost pepper amount downward for family-friendly heat. Serves best hot and freshly assembled.
