Sweat aromatics
Add the finely minced shallot and sauté for 2–3 minutes until translucent and softened. Add the minced garlic and cook, stirring, for 30–45 seconds until fragrant but not browned.

Stir in the chopped fresh red chile and red chili flakes. Cook 1 minute to bloom the chile heat. Add smoked paprika, ground cumin, and ground black pepper; stir for 20–30 seconds to toast the spices and release aroma.

Remove the pan from heat. Stir in the fresh lime juice and sea salt. Taste and adjust: more salt, more lime for brightness, or a pinch more sugar to balance heat.
Strain (optional) and garnish
For a smooth finish, press the sauce through a fine-mesh sieve into a bowl, using the back of a spoon to extract solids. Stir in the chopped cilantro or parsley if using. Transfer to a serving container or keep warm until ready to use.
