    Prepare the Vegetables

    Chop the red and green bell peppers, zucchini, onion, and tomato into bite-sized pieces. Mince the garlic cloves.

    Sauté the Base

    In a large paella pan or skillet, heat the olive oil over medium heat. Add the onion and garlic, sautéing until the onion is translucent.

    Add the Vegetables

    Stir in the chopped bell peppers, zucchini, and artichoke hearts. Cook for about 5-7 minutes until they start to soften.

    Add the Rice and Spices

    Add the Bomba rice, saffron, paprika, salt, and black pepper. Stir well to combine and toast the rice for about 2 minutes.

    Add Broth

    Pour in the vegetable broth and bring to a boil. Reduce the heat to low and simmer for about 15 minutes without stirring.

    Add Peas and Finish Cooking

    After 15 minutes, add the green peas and continue cooking for another 5-7 minutes or until the rice is cooked and the liquid is absorbed.

    Rest and Serve

    Remove from heat, cover with a clean kitchen towel, and let it sit for about 5 minutes before serving. Garnish with fresh herbs if desired.
