Prepare the Tapioca
In a saucepan, bring the water to a boil. Add the tapioca pearls and cook for about 15-20 minutes, or until they become translucent and chewy. Drain and set aside.

Make the Cheese Mixture
In a large bowl, combine the cooked tapioca, grated cheddar cheese, grated parmesan cheese, eggs, salt, and black pepper. Mix until well combined.

Form the Croquettes
Take small portions of the mixture and form into dice-sized cubes. Roll each cube in breadcrumbs to coat.

Fry the Croquettes
In a large skillet, heat the olive oil over medium heat. Add the croquettes in batches and fry until golden brown on all sides, about 3-4 minutes per side. Remove and drain on paper towels.

Prepare the Guava and Balsamic Reduction
In a small saucepan, combine guava paste and balsamic vinegar. Heat over low heat, stirring until the guava paste has melted and the mixture is smooth. Cook for an additional 2-3 minutes until slightly thickened.

Plate the croquettes and drizzle with the guava and balsamic reduction before serving.
