    Prepare the dough

    In a saucepan, combine the water, butter, sugar, and salt. Bring to a boil and remove from heat. Stir in the purple corn flour and all-purpose flour until the mixture forms a ball. Let cool slightly.

    Add eggs

    Once the dough is cool enough to handle, add the eggs one at a time, mixing well after each addition until fully incorporated.

    Heat oil

    In a deep frying pan, heat vegetable oil to 375°F (190°C).

    Fry churros

    Transfer dough to a piping bag fitted with a star tip. Pipe strips of dough into the hot oil and fry until golden brown. Remove and drain on paper towels.

    Roll in sugar

    Roll the hot churros in a mixture of sugar and cinnamon (optional) while they are still warm.

    Prepare dulce de leche

    In a saucepan, combine sweetened condensed milk, coffee, and vanilla extract. Cook over low heat, stirring constantly, until thickened.

Chocolate Ancho Chili Sauce

    Make the sauce

    In a saucepan, heat heavy cream until just steaming. Remove from heat and add chopped dark chocolate and ancho chili powder. Stir until smooth and combined.
