Prepare the Chicken
In a large skillet, heat the olive oil over medium-high heat. Season the chicken thighs with salt, pepper, and paprika. Once the oil is hot, add the chicken, skin side down, and sear until golden brown, about 5-7 minutes. Flip and sear the other side for an additional 5 minutes.

Add Garlic & Wine
Add the minced garlic to the skillet and sauté for 1 minute until fragrant. Pour in the white wine and bring to a simmer, scraping the bottom of the skillet to deglaze.

Simmer with Broth
Add the chicken broth to the skillet, cover, and reduce the heat to low. Let the chicken simmer for 20-25 minutes until cooked through.

Cook the Rice
While the chicken is simmering, rinse the rice under cold water. In a separate pot, combine the rice and water, and bring to a boil. Once boiling, reduce to low, cover, and cook for 15-20 minutes until the rice is tender and the water is absorbed.
