Combine Ingredients
In a cocktail shaker, combine the pisco, lemon juice, simple syrup, and egg white.

Dry Shake
Shake the mixture without ice vigorously for about 15 seconds to emulsify the egg white.

Shake with Ice
Add ice to the shaker and shake again for another 15-20 seconds until well chilled.

Strain and Serve
Strain the mixture into a chilled cocktail glass.

Garnish
Add a couple of dashes of Angostura bitters on top of the foam for garnish.
