Preparation and Frying

    Prepare the Malanga

    Peel the malanga and slice it thinly using a mandoline or a sharp knife. Aim for uniform thickness for even frying.

    Soak the Slices

    Soak the malanga slices in cold water for about 30 minutes to remove excess starch, which helps them become crispier when fried.

    Heat the Oil

    In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Malanga

    Carefully add the soaked malanga slices to the hot oil in batches, making sure not to overcrowd the pan. Fry until golden brown and crispy, about 3-5 minutes.

    Drain and Season

    Remove the chips from the oil using a slotted spoon and transfer them to a paper towel-lined plate to drain excess oil. While they are still hot, sprinkle with salt and paprika.
