Crisps and Guacamole
Method
Preparation and Cooking
- 1
Prepare the Plantains
Peel the green plantains and slice them thinly (about 1/8 inch thick).
- 2
Fry the Plantain Slices
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the plantain slices in batches, ensuring they do not overcrowd the pan. Fry until golden and crispy, about 3-4 minutes per side. Remove from oil and drain on paper towels. Sprinkle with salt while still warm.
- 3
Make the Guacamole
In a medium bowl, mash the ripe avocados with a fork. Stir in lime juice, chopped cilantro, diced red onion, minced jalapeño, and salt until well combined.
- 4
Serve
Serve the crispy plantains warm with the taquero guacamole on the side.
