    Prepare the Rice

    Rinse the basmati rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming sticky.

    Cook the Rice

    In a medium saucepan, combine the rinsed rice, water, salt, and half of the chopped herbs (cilantro, parsley, and mint). Bring to a boil over medium-high heat, then reduce the heat to low. Cover and simmer for about 15-20 minutes or until the rice is tender and water is absorbed.

    Fry the Onions

    While the rice is cooking, heat the oil in a skillet over medium heat. Add the thinly sliced onion and fry until golden brown and crispy, stirring occasionally. This should take about 5-7 minutes. Remove from heat and drain on paper towels.

    Fluff and Serve

    Once the rice is cooked, remove it from heat and let it sit, covered, for another 5 minutes. Fluff the rice with a fork and stir in the remaining herbs. Serve topped with the crispy fried onions.
