Prepare the Pork Belly
Preheat the oven to 220°C (428°F). Score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat. Rub the pork belly with salt, black pepper, and garlic powder. Drizzle with olive oil and massage into the pork belly.

Roast the Pork Belly
Place the pork belly on a roasting rack in a baking dish. Roast in the preheated oven for about 30 minutes until the skin is crispy. Reduce the temperature to 160°C (320°F) and continue to roast for another 1.5 hours, basting occasionally.

Prepare Agave Sriracha Sauce
In a small saucepan, combine agave syrup, sriracha sauce, and water. Bring to a simmer over medium heat, and cook until slightly thickened, about 5-7 minutes. Remove from heat.

Assemble the Dish
Once the pork belly is crispy and cooked through, let it rest for about 10 minutes. Slice into pieces. Serve on warmed arepas, topped with guacamole and drizzled with agave sriracha sauce.
