Prepare Cochinita Pibil

Marinate the Pork
In a bowl, combine achiote paste, orange juice, minced garlic, salt, and black pepper. Rub this mixture all over the pork shoulder. Cover and marinate for at least 4 hours or overnight in the refrigerator.

Roast Pineapple

Prepare Pineapple
While the pork is cooking, preheat a grill or a grill pan. Sprinkle the pineapple slices with brown sugar and cinnamon. Grill for about 3-4 minutes on each side until caramelized.
Make Habanero Chilli Jam

Prepare the Jam
In a saucepan, combine chopped habanero peppers, sugar, and apple cider vinegar. Bring to a boil, then reduce the heat and simmer for 20-25 minutes until thickened. Let cool.
Make Corn Tortillas

Assemble the Dish
Shred the cooked pork and serve in corn tortillas with grilled pineapple slices, pickled red onions, and a drizzle of habanero chilli jam.
