Prepare the Ingredients
Slice the chorizo sausage into bite-sized pieces. Mince the garlic cloves, chop the onion, and dice the red bell pepper.

Sauté the Aromatics
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and diced red bell pepper, cooking for another 2 minutes.

Cook the Chorizo
Add the sliced chorizo to the skillet. Cook for about 5 minutes, stirring occasionally, until the chorizo starts to brown.

Add Wine and Simmer
Pour in the red wine, add the bay leaves, black pepper, and salt. Bring to a simmer and let it cook for 15-20 minutes, allowing the flavors to meld and the sauce to reduce slightly.

Serve
Remove the bay leaves and serve the chorizo al vino hot, with crusty bread or over rice, if desired.
