- 1
Prepare mixing glass
Chill a rocks glass (or coupe if preferred) by filling it with ice or placing it in the freezer for a few minutes. Meanwhile, select a mixing glass or cocktail shaker and add 6 large ice cubes.
- 2
Measure and pour
Using a jigger, measure 1 oz dry gin, 1 oz gentian-based white bitter (eg. Suze or similar), and 1 oz blanc vermouth into the mixing glass over the ice.
- 3
Add bitters
Add 2 dashes of orange bitters to the mixing glass to lift aromatics and add citrus complexity.
- 4
- 5
Prepare serving glass
Discard the ice from the chilled rocks glass. Place a large ice cube into the glass for a slow-diluting serve.
- 6
Strain and garnish
Double-strain or use a Hawthorne/ julep strainer to pour the cocktail from the mixing glass into the prepared rocks glass over the large ice cube. Express a lemon twist over the drink by holding peel with the outside facing down and giving it a firm twist to spray oils onto the surface, then rub the rim with the peel and drop it into the glass as garnish.
- 7
Serve immediately and enjoy. Note: adjust bitterness by slightly reducing/increasing the gentian bitter measure or adding another dash of orange bitters to taste.
