Cocktail

Method

Cocktail

  1. 1

    Chill glass

Place a coupe or martini glass in the freezer for 5–10 minutes or fill it with ice water while you prepare the cocktail to ensure the drink stays cold and retains crema.

  2. 2

    Combine ingredients

Add 2 oz Tito's vodka, 0.5 oz Averna, 1 oz Iconik cold brew concentrate, and 0.5 oz demerara syrup into a cocktail shaker. If you prefer a slightly more intense espresso flavor, add 0.25 oz fresh espresso or an additional 0.25 oz cold brew.

  3. 3

    Dry shake (optional)

If using fresh espresso and you want extra crema, perform a dry shake first: secure the shaker (without ice) and shake vigorously for 10–15 seconds to emulsify and build foam.

  4. 4

    Wet shake

Add 1 cup of ice to the shaker, seal, and shake very hard for 15–25 seconds. The goal is to chill the mixture quickly and create a thick, velvety crema from the coffee and Averna.

  5. 5

    Strain

Discard ice from the chilled glass if used. Double-strain the cocktail into the chilled coupe or martini glass using a Hawthorne and fine mesh strainer to remove small ice shards for a smooth texture.

  6. 6

    Optional espresso float

If you did not add fresh espresso earlier, gently pour 0.25 oz of freshly pulled espresso or concentrated cold brew over the back of a spoon to float it on the surface for extra aroma and crema.

Garnish

  1. 7

Carefully place 3 coffee beans evenly spaced on the surface of the cocktail. Lightly grate a pinch (about 0.25 tsp) of demerara sugar or dark chocolate over the top for aroma and a touch of texture.

  2. 8

Serve immediately while the cocktail is cold and the crema is present. Provide a small napkin or coaster.
