Cucumber Collins Cocktail

For Simple Syrup (if making fresh)

Prepare Simple Syrup (optional)

    Make 1:1 simple syrup

    Combine 0.25 cup sugar and 0.25 cup water in a small saucepan. Heat gently, stirring until sugar dissolves. Remove from heat and cool to room temperature. Transfer to a small jar; refrigerate if not using immediately.

Build the Cocktail

    Muddle cucumber

    Place 3 cucumber slices into a cocktail shaker or mixing glass. Add the 0.5 oz simple syrup and 0.75 oz fresh lime juice. Gently muddle 6–8 times to release cucumber juices and combine with the sweet-tart base. Avoid over-muddling into a puree.

    Add base and ice

    Add 2 oz Ritual gin alternative to the shaker. Fill the shaker with ice (about 1 cup) to chill and dilute properly.

    Shake

    Secure the shaker and shake vigorously for about 10–12 seconds until well-chilled (exterior of shaker becomes cold and slightly frosty).

    Strain into glass

    Double-strain the mixture into a Collins glass or highball glass filled with fresh ice to remove cucumber solids. Use a fine mesh strainer over the shaker’s strainer for a cleaner texture.

    Top with bubbles

    Gently top the drink with 3 oz club soda or sparkling water. Stir once gently with a bar spoon to integrate without flattening the bubbles.

    Garnish and serve

    Thread a cucumber ribbon or slice on a pick and rest on the rim, add a lime wheel and, optionally, a sprig of fresh mint. Serve immediately with a straw.
