Prepare the Peppers
Carefully wash the piquillo peppers under cold water. If using jarred piquillo peppers, drain and pat dry with a paper towel.
Make the Marinade
In a mixing bowl, combine the extra virgin olive oil, dried oregano, salt, and crushed red pepper flakes. Whisk until well combined.
Marinate the Peppers
Place the cleaned piquillo peppers in a shallow dish. Pour the marinade over the peppers, ensuring they are evenly coated. Cover and let marinate for at least 30 minutes at room temperature, or up to 2 hours in the refrigerator for more flavor.
Serve
Arrange the marinated piquillo peppers on a serving plate. Drizzle with any remaining marinade and serve at room temperature as an appetizer or side dish.
