Shishito Peppers with Ponzu Butter and Bonito Flakes

Prepare the Ponzu Butter
In a small bowl, combine the softened unsalted butter and ponzu sauce. Mix well until fully combined and smooth. Set aside.

Prepare the Shishito Peppers
Rinse the shishito peppers under cold water and pat them dry with a paper towel. This will help them blister nicely when cooked.

Heat the Pan
In a large skillet over medium-high heat, add the olive oil and allow it to heat until shimmering.

Cook the Peppers
Add the shishito peppers to the hot oil and cook them for about 5-7 minutes, turning occasionally, until they are blistered and charred in spots.

Season the Peppers
Once the peppers are cooked, remove them from heat and immediately sprinkle with salt to taste.

Serve
Transfer the blistered shishito peppers to a serving plate. Top with a dollop of ponzu butter and sprinkle bonito flakes over the top. Serve immediately with a lemon wedge on the side for squeezing.
