Preparation of Vegetables

    Roast the Poblano Peppers

    Preheat your oven to 425°F (220°C). Place the poblano peppers on a baking sheet and drizzle with 1 tablespoon of olive oil. Roast in the oven for about 20-25 minutes, turning occasionally, until the skin is blistered and charred.

    Roast the Portobello Mushrooms

    Remove the stems from the portobello mushrooms and brush them with the remaining tablespoon of olive oil. Sprinkle with salt, black pepper, and smoked paprika. Place them on the baking sheet with the poblano peppers for the last 15 minutes of roasting.

    Prepare the Garlic

    In the last 10 minutes of roasting, add the garlic cloves (with skins on) to the baking sheet to roast until soft and fragrant.

Preparation of Garbanzo Beans

    Mash the Garbanzo Beans

    In a bowl, add the garbanzo beans and mash them with a fork or a potato masher until they reach a creamy consistency. Add the roasted garlic (peeled), aji amarillo paste, and lemon juice. Mix until well combined.

    Combine the Roasted Vegetables

    Once the peppers and mushrooms are roasted, remove them from the oven and allow to cool slightly. Peel the skin off the poblano peppers and slice them into strips. Slice the portobello mushrooms into thick slices.

    Serve the Schiacciata

    On a serving platter, spread the mashed garbanzo mixture as a base. Arrange the roasted poblano strips and sliced portobello mushrooms on top. Drizzle with a little more olive oil if desired, and serve warm or at room temperature.
