In a large mixing bowl, combine the warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

In another bowl, mix the all-purpose flour and salt together.

Once the yeast mixture is frothy, add it to the flour mixture along with olive oil. Stir until a dough forms.

Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

Place the kneaded dough in a lightly oiled bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Bread
Once risen, punch down the dough and divide it into 4 equal pieces. Shape each piece into a flat round disc.

Slice the smoked pork loin and mozzarella cheese into thin pieces.

Take one piece of the schiacciata bread, layer slices of smoked pork, mozzarella, pickled peppers, and fresh basil leaves. Season with black pepper to taste.

Top with another piece of schiacciata bread and press down gently.
