For the Schiacciata Bread

Method

For the Schiacciata Bread

  1. 1

    Prepare the Dough

In a large mixing bowl, combine the warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

  2. 2

    Mix Dry Ingredients

In another bowl, mix the all-purpose flour and salt together.

  3. 3

    Combine Ingredients

Once the yeast mixture is frothy, add it to the flour mixture along with olive oil. Stir until a dough forms.

  4. 4

    Knead the Dough

Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

  5. 5

    Let Dough Rise

Place the kneaded dough in a lightly oiled bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

  6. 6

    Shape the Bread

Once risen, punch down the dough and divide it into 4 equal pieces. Shape each piece into a flat round disc.

  7. 7

    Cook the Bread

Preheat a skillet or griddle over medium heat. Cook each disc for about 3-4 minutes on each side until golden brown and cooked through.

For the Filling

  1. 8

    Prepare the Filling

Slice the smoked pork loin and mozzarella cheese into thin pieces.

  2. 9

    Assemble the Sandwich

Take one piece of the schiacciata bread, layer slices of smoked pork, mozzarella, pickled peppers, and fresh basil leaves. Season with black pepper to taste.

  3. 10

    Close the Sandwich

Top with another piece of schiacciata bread and press down gently.

  4. 11

    Serve

Cut the sandwich in half and serve immediately while the bread is warm.
