    Prepare the Mussels

    Rinse the mussels under cold running water, scrubbing the shells to remove any debris. Discard any mussels that are open and do not close when tapped.

    Chop Garlic and Parsley

    Finely chop the garlic and parsley. Set aside for later use.

    Slice Chorizo

    Slice the Iberico chorizo into small rounds.

Cooking

    Cook Chorizo

    In a large pot, heat the olive oil over medium heat. Add the chorizo and cook until it starts to release its oils, about 3-4 minutes.

    Add Garlic

    Add the chopped garlic and cook for another 1-2 minutes until fragrant.

    Add Tomatoes and Dashi

    Pour in the diced tomatoes and crustacean dashi. Stir well to combine and bring to a simmer.

    Cook Mussels

    Add the cleaned mussels to the pot. Cover with a lid and cook for about 5-7 minutes, or until the mussels open. Discard any that remain closed.

    Season and Garnish

    Season the dish with salt and black pepper to taste. Stir in the chopped parsley just before serving.

Serving

    Serve with Focaccia

    Serve the mussels hot, with the broth ladled into bowls. Accompany with slices of focaccia for dipping.
