Bone Marrow

Caramelized Onions

Grilled Unagi

Method

Bone Marrow

  1. 1

    Prepare the Bone Marrow

Preheat your oven to 450°F (230°C). Place the bone marrow bones upright on a baking sheet. Drizzle with olive oil, and season with salt and black pepper. Roast in the oven for 15-20 minutes, until the marrow is bubbly and begins to separate from the bone.

Caramelized Onions

  1. 2

    Caramelize the Onions

While the bones are roasting, slice the onions thinly. In a large skillet, heat butter and olive oil over medium heat. Add the sliced onions, salt, and sugar. Cook, stirring occasionally, for about 20-25 minutes, until the onions are golden brown and caramelized.

Grilled Unagi

  1. 3

    Grill the Unagi

In a grill pan or on an outdoor grill, cook the unagi fillets over medium heat for 4-5 minutes on each side. Brush with teriyaki sauce during the last couple of minutes of grilling for added flavor. Once done, remove from heat and sprinkle with sesame seeds and thinly sliced green onions.

Assembly

  1. 4

    Assemble the Dish

Once the bone marrow is roasted, remove it from the oven. Serve the bone marrow alongside the caramelized onions and grilled unagi. Enjoy by scooping the marrow out with a spoon, spreading it on toasted bread if desired, and topping it with caramelized onions and grilled unagi.
