Crisp Farro Cookies

Prepare the Farro
Rinse 1 cup of farro under cold water. In a medium saucepan, combine the rinsed farro with 3 cups of water. Bring to a boil, reduce the heat to low, cover, and simmer for 30 minutes or until tender. Drain any excess water and let cool.

Preheat Oven
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients
In a large mixing bowl, whisk together 1 cup of all-purpose flour, 1 cup of brown sugar, 1 tablespoon of granulated sugar, 1 teaspoon of baking powder, 1 teaspoon of baking soda, and 1 teaspoon of salt until well combined.

Cream Butter and Sugar
In another bowl, cream together 0.5 cup of unsalted butter and the sugars until light and fluffy. Add 1 teaspoon of vanilla extract and 1 large egg, mixing until fully combined.

Combine Mixtures
Gradually add the dry ingredients to the butter mixture, stirring until just combined. Fold in the cooked farro and optional chopped nuts if using.

Shape Cookies
Using a tablespoon, scoop out the cookie dough and place it onto the prepared baking sheet, spacing them about 2 inches apart.

Bake Cookies
Bake in the preheated oven for 12-15 minutes or until the edges are golden brown. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack.

Serve with Jam
Once cooled, serve the cookies with a dollop of grapefruit jam on top.
