Bufala Ricotta Preparation

    Heat the Buffalo Milk

    In a large pot, pour the buffalo milk and heat it over medium heat. Stir gently to avoid scorching the milk.

    Acidify the Milk

    Once the milk reaches a temperature of about 85°C (185°F), remove it from the heat. Slowly add the white vinegar while stirring gently. This will cause the milk to curdle.

    Let It Rest

    Cover the pot with a lid and let it sit undisturbed for about 10-15 minutes. During this time, the curds will separate from the whey.

    Strain the Curds

    Line a fine-mesh strainer or cheesecloth over a bowl. Carefully pour the curdled mixture into the strainer, allowing the whey to drain out. Let it sit for about 30 minutes to an hour.

    Mix in Salt and Cream

    Once the curds have drained to your desired consistency, transfer them to a mixing bowl. Add the salt and cream, mixing gently until combined.

    Add Fresh Herbs (Optional)

    If desired, finely chop the fresh herbs and fold them into the ricotta for added flavor.

    Store and Serve

    Transfer the bufala ricotta to an airtight container and refrigerate. It can be served fresh or used in various dishes.
