Prepare the Oysters

Rinse the fresh oysters under cold running water to remove any sand or grit. Use a brush if necessary to scrub the shells.

Shuck the Oysters

Using an oyster knife, carefully shuck the oysters by inserting the knife into the hinge of the shell and twisting it open. Remove the top shell and loosen the oyster from the bottom shell, being careful not to spill the juice.

Prepare the Crackers

If you are using house-made crackers, ensure they are baked and ready to serve. If not, you may use store-bought crackers of your choice.

Prepare the Pickles

Slice the pickles into thin rounds or quarters, depending on your preference, and place them in a serving bowl.

On a large serving platter, arrange the shucked oysters, house-made crackers, and pickles. Drizzle the oysters with extra virgin olive oil (EVOO) just before serving.
