Roll Filling

Prepare Crab Filling
Gently pick through lump blue crab meat to remove any shell pieces. In a medium bowl, combine the crab meat with Japanese mayonnaise, sriracha, finely chopped chives, lime juice, kosher salt, and black pepper. Fold gently to keep lumps intact and maintain a light, flaky texture. Taste and adjust seasoning. Refrigerate while preparing rice so flavors meld (10–15 minutes).

Prepare and Season Rice
If rice is not already cooked, rinse 1 cup short-grain sushi rice until water runs clear, cook according to package (yields ~2 cups cooked). While hot, transfer to a shallow bowl and fold in rice vinegar seasoning (rice vinegar mixed with sugar and salt). Fan rice as you fold to cool to slightly warm (not hot). Cover with a damp towel to keep moist.

Lay Out Nori and Rice
Place a bamboo sushi mat on plastic wrap. Lay a full nori sheet, shiny side down. Wet your hands with rice vinegar-water to prevent sticking. Spread about 1/2 cup seasoned sushi rice evenly over the nori, leaving a 1-inch strip at the top edge. Lightly brush the rice surface with a small amount of sesame oil and sprinkle toasted sesame seeds.

Add Filling and Roll
Spoon a thin strip (about 2–3 tbsp) of the chilled crab mixture along the center of the rice. Using the bamboo mat, roll firmly but gently from the bottom edge, tucking the filling and compressing into a tight roll. Seal the top edge of nori with a little water. Repeat to make 3–4 rolls (depending on nori and rice quantities).

Slice the Roll
Using a sharp, wet knife (dipped in warm water and wiped between cuts), cut each roll into 6–8 even pieces. For clean slices, make a single smooth stroke rather than a sawing motion. Arrange pieces on a serving plate.
Aioli & Butter Truffle Ponzu

Make or Prepare Garlic Aioli
If using store-bought aioli, spoon into a squeeze bottle and set aside. To make quick aioli: whisk one egg yolk with 1 tsp lemon juice and a pinch of salt. Slowly stream in 1 cup neutral oil while whisking constantly until emulsified, then fold in 1/2–1 cup garlic paste or finely grated garlic to taste. Chill.

Prepare Butter Truffle Ponzu
In a small saucepan over low heat, melt the unsalted butter. Remove from heat and whisk in ponzu sauce and truffle oil (or a teaspoon of truffle butter). Taste and adjust with up to 1 tsp soy sauce if you want more umami, but be careful not to overpower the citrus of the ponzu. Keep warm (not hot) — the butter should remain liquid to glaze the rolls.

Assemble Sauce Application
Transfer the garlic aioli to a squeeze bottle (or piping bag) and the butter truffle ponzu to a small ladle or another squeeze bottle. Drizzle or dot aioli over each roll piece, then lightly spoon the warm butter truffle ponzu across the top. The warm ponzu will slightly gloss the aioli and impart a buttery-truffle citrus finish.
Finish & Garnish

Garnish each roll piece with a few snipped chives and a small microgreen or cilantro leaf. Add a light sprinkle of toasted sesame seeds if desired. Serve with pickled ginger and wasabi on the side. Serve immediately so the rice remains tender and the butter ponzu is slightly warm.
