Cheesecake Base
Prepare the crust
Preheat your oven to 325°F (160°C). In a mixing bowl, combine the graham cracker crumbs, 0.5 cups of granulated sugar, and melted butter. Mix until well combined.
Press the crust
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake in the preheated oven for 10 minutes. Remove and let cool slightly.
Make the cheesecake filling
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add 1 cup of granulated sugar and beat until creamy. Mix in the vanilla extract and sour cream until combined.
Add the eggs
Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.
Bake the cheesecake
Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the oven for 55-60 minutes, or until the edges are set and the center is slightly jiggly.
Cool the cheesecake
Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour. Remove from the oven and refrigerate for at least 4 hours, or overnight.
Strawberry Sauce
Prepare the sauce
In a small saucepan, combine the sliced strawberries, 0.25 cups of granulated sugar, and lemon juice.
Cook the sauce
Cook over medium heat, stirring gently until the strawberries release their juices and the mixture thickens slightly, about 10 minutes.
Cool the sauce
Remove from heat and let the sauce cool to room temperature. You can refrigerate it if you prefer it chilled.
