Preparation
1. Wash and Chop Vegetables
Wash all vegetables thoroughly. Peel and chop the carrots into small pieces. Dice the bell peppers, and chop the broccoli florets and zucchini into bite-sized pieces.
Cooking
2. Heat Olive Oil
In a large skillet, heat 2 tablespoons of olive oil over medium heat.
3. Sauté Vegetables
Add the chopped carrots, bell peppers, broccoli, and zucchini to the skillet. Sauté the vegetables for about 5-7 minutes, or until they start to soften.
4. Season the Mixture
Sprinkle garlic powder, salt, black pepper, and dried Italian herbs over the vegetables. Stir well to combine and cook for an additional 2-3 minutes.
5. Optional Additions
If using, add the cooked chickpeas and stir in the Parmesan cheese. Cook for another 2 minutes until everything is heated through and the cheese has melted.
Serving
6. Serve Warm
Remove from heat and transfer the vegetable mixture to a serving bowl. Serve warm as a side dish or a healthy main dish for kids.
