Clean and prep mussels
Place mussels in a large bowl and cover with cold water. Add 1 tsp salt and swish to loosen grit. Let soak 10 minutes. Using a brush or your thumb, scrub each shell to remove barnacles and pull off the beard (byssus thread). Discard any mussels with broken shells or that do not close when tapped. Drain and set aside.
Spicy Lime Sauce

Cook aromatics
In a wide, heavy-bottomed pot or deep skillet with a tight-fitting lid, heat 2 tbs olive oil and 1 tbs butter over medium heat until butter melts and foams. Add the minced shallot and cook, stirring, 2–3 minutes until softened but not browned. Add the minced garlic and cook 30–45 seconds until fragrant.

Build the sauce
Stir in the chile paste (1 tsp), honey (1 tsp) and lime zest (1 tsp). Pour in 1 cup dry white wine and bring to a gentle simmer, scraping any browned bits from the pan. Let the wine reduce by about one-third (2–3 minutes). If you prefer less alcohol flavor or a slightly saucier finish, add 1 tbs low-sodium stock now.

Finish the sauce
Add 3 tbs fresh lime juice, 1 tsp kosher salt, 1 tsp black pepper and 1 tsp red pepper flakes (if using). Reduce heat to low and stir in the chiffonaded basil (about 1 cup). Taste and adjust seasoning — add more lime for brightness, more chile paste for heat, or a pinch of salt if needed.
Cook Mussels

Bring the sauce to a lively simmer on medium-high. Add the cleaned mussels to the pot, cover with the lid, and steam for 4–6 minutes, shaking the pot once or twice to redistribute mussels. Check at 4 minutes: mussels should have opened wide. Continue steaming until most are open. Discard any mussels that remain tightly closed after cooking.

Using tongs or a slotted spoon, transfer mussels to a warmed shallow bowl, leaving the cooking liquid in the pot. If you want more sauce, simmer the cooking liquid 1–2 minutes to concentrate; if too tangy, add up to 1 tbs stock or a drizzle more olive oil to round it out.

Spoon the spicy lime sauce over the mussels. Garnish with whole fresh basil leaves and serve with lime wedges on the side.

Serve immediately with slices of crusty bread to soak up the sauce. Estimated plating: arrange mussels in a shallow bowl, ladle 1/3–1/2 cup sauce per 2-lb batch, garnish with basil and lime wedges.
