Method
Crispy Rice

Prepare rice cakes
Spread the 3 cups of chilled cooked short-grain rice in an even layer on a sheet tray lined with parchment. Press firmly with another sheet of parchment or a second tray to compact into a flat 1/2-inch layer. Refrigerate at least 1 hour (or flash 20–30 minutes in freezer) to firm up for cutting.

Sour Pork (Naem-style)

In a bowl combine 1 lb ground pork, 1/4 cup finely chopped pork skin (if using), 3 minced garlic cloves, 1 minced shallot, 1.5 tsp coarse sea salt, 2 tbsp mashed cooked rice, 1/2 tsp sugar and 1 tsp fish sauce. Mix thoroughly until sticky — this helps fermentation-like tang develop if left briefly.

Cover tightly and refrigerate for at least 2 hours and up to 6 hours to allow flavors to meld and develop a mild tang. (Note: true long fermentation makes authentic sour pork; here we aim for a bright, slightly tangy quick version. If you prefer a fully fermented naem, follow safe fermentation practices and allow 3–5 days refrigerated.)

After resting, taste and adjust with up to 1 tsp rice vinegar if you want a brighter tang. Keep chilled until assembly.
Roasted Rice Powder (Khao Khua)

Heat a dry heavy skillet over medium-high heat. Add the 3/4 cup uncooked rice in an even layer. Toast, stirring or shaking constantly, until the rice becomes a deep golden-brown and gives a nutty aroma, 8–12 minutes. Be attentive — rice can burn quickly.

Remove from heat and let cool briefly. Transfer toasted rice to a spice grinder or mortar and pestle and grind to a coarse powder. Season with 1/4 tsp salt. Set aside. This is the house roasted rice powder.
Lemongrass Dressing & Aromatics

Combine 2 tbsp finely minced lemongrass, 2 tbsp fresh lime juice, 1 tsp palm or brown sugar, 1 tsp fish sauce and 1 tsp thinly sliced chilies in a small bowl. Stir until sugar dissolves.

Fold in 2 tbsp chopped cilantro and 2 tbsp thinly sliced shallot. Taste and adjust with more lime or fish sauce as desired. Keep chilled until plating.
Finish & 'On Fire' Presentation

Assemble: Place a crispy rice cake on a serving plate. Spoon 2–3 tablespoons of the prepared sour pork mixture on top of each rice cake, slightly pressing so it adheres.

Spoon about 1 tablespoon of the lemongrass dressing over the sour pork on each cake, then sprinkle generously with 1–1.5 teaspoons roasted rice powder for aroma and texture. Garnish with a few extra cilantro leaves and shallot slices.

To create the 'on fire' effect: warm 2 tablespoons of the neutral high-smoke oil (not smoking) and brush lightly over the top of the assembled cakes. Using long matches or a long lighter, carefully ignite a small amount of oil on the top of the rice cake just before serving — the flame will be brief. Blow out the flame after a few seconds, then serve immediately with lime wedges. (Safety note: perform flaming on a non-flammable surface and keep a lid or extinguisher nearby; if uncomfortable, skip the flaming and simply pour warmed oil tableside.)
