Vegetables
Seasoning & Finishing
Method
Prepare Vegetables
- 1
Rinse and cut
Rinse all vegetables under cold running water. Trim broccoli into florets (about 2 cups), separate cauliflower into small florets (about 1 cup). Peel and slice the carrot into 1/4-inch rounds (about 1 cup). Trim snap peas and remove the stem string. Core and slice the red bell pepper into 1/2-inch strips (about 1 cup).
- 2
Pat vegetables dry with a clean towel or paper towel so they steam properly and don't waterlog.
Steam Vegetables
- 3
Set up steamer
Pour 1 cup of water into a medium saucepan. Place a steamer basket or heatproof colander so it sits above the water level (water should not touch the vegetables). Bring the water to a gentle boil over medium-high heat.
- 4
Steam in batches
Add denser vegetables first: place carrots and cauliflower in the steamer basket, cover, and steam for 3 minutes. After 3 minutes, add broccoli, snap peas, and red bell pepper on top (or in a second basket layer). Cover and continue steaming for 3–4 more minutes, until vegetables are crisp-tender (pierce a carrot with a fork — it should be tender but not mushy). Total steaming time ~6–7 minutes depending on thickness.
- 5
If you prefer a softer texture, steam an additional 1–2 minutes. Avoid over-steaming to preserve nutrients and color.
Season and Serve
- 6
Prepare dressing
While vegetables steam (or immediately after), combine 1 tablespoon extra-virgin olive oil, 1 tablespoon fresh lemon juice, 1 teaspoon minced garlic, 1 teaspoon sea salt, 1 teaspoon freshly ground black pepper, and 1/4 teaspoon red pepper flakes in a small bowl. Whisk to combine.
- 7
Transfer the steamed vegetables to a large serving bowl. Drizzle the dressing over the hot vegetables and gently toss to coat evenly so flavors meld.
- 8
Taste and adjust seasoning: add more salt, pepper, or lemon juice as desired. Sprinkle 2 tablespoons chopped fresh parsley on top if using.
- 9
Serve immediately as a healthy side or cool to room temperature and refrigerate in an airtight container for up to 3 days.
