Vegetable filling

Prep vegetables
Julienne the carrot, thinly slice the cabbage and mushrooms, trim bean sprouts, and thinly slice the green onions. Mince the garlic and ginger. Chop cilantro if using.

Heat a wok or large skillet over medium-high heat. Add 1 tablespoon neutral oil and swirl to coat.

Add the mushrooms and cook 1–2 minutes until they begin to soften and release liquid.

Add the carrot and cabbage and stir-fry 2–3 minutes until vegetables are tender-crisp. Add bean sprouts last and toss for 30 seconds so they retain some crunch.

Season the mixture with 1 tablespoon soy sauce, 1/2 teaspoon rice wine vinegar, 1/2 teaspoon sesame oil, 1/4 teaspoon salt and 1/4 teaspoon black pepper. Stir to combine and cook another 30 seconds.

Remove from heat. Stir in the green parts of the green onions and chopped cilantro (if using). Spread filling on a shallow tray or plate and let cool to room temperature (about 10–15 minutes). It's important the filling is not hot when wrapping or it will steam the wrapper and make sealing difficult.

Prepare a small bowl with the cornstarch slurry (1 tablespoon cornstarch + 1 tablespoon water) and stir until smooth. This will act as the glue to seal the rolls.

Lay a spring roll wrapper on a clean, dry surface with one corner pointing toward you (diamond shape). Place about 2–3 tablespoons of the cooled filling near the corner closest to you, forming a thin log about 1–1.5 inches wide. Do not overfill—overstuffing prevents proper sealing and frying.

Fold the bottom corner up over the filling, tuck snugly, then fold the two side corners toward the center. Brush the top corner edge with a little cornstarch slurry and roll firmly to seal. Repeat with remaining wrappers and filling. You should get about 12 rolls depending on filling amounts.
Frying

Pour oil into a deep saucepan or wok to a depth of about 2–2.5 inches (enough to submerge rolls). Heat oil over medium-high heat to 350°F (175°C). If you don't have a thermometer, test by dropping a small corner of wrapper into the oil: it should sizzle and rise steadily without browning immediately.

Working in batches (do not overcrowd), carefully lower 3–4 rolls into the hot oil seam-side down. Fry 2.5–3.5 minutes, turning occasionally, until golden brown and crisp on all sides.

Use a slotted spatula or spider strainer to remove rolls and drain on a wire rack set over a baking sheet or paper towels. Keep finished rolls warm in a low oven (200°F / 95°C) while you fry remaining batches.

If you prefer a lighter method, you can brush each roll lightly with oil and bake at 425°F (220°C) for 12–16 minutes, turning halfway, until golden and crisp.
Sweet chili dipping sauce

In a small bowl, mix 3/4 cup store-bought sweet chili sauce with 1 tablespoon lime juice. Stir in 1 tablespoon chopped cilantro if using. Taste and adjust: add more lime if you want extra tang, or thin with 1–2 teaspoons water if too thick.
