Prepare the Dough
In a large bowl, combine the warm water, sugar, and yeast. Let it sit for about 5 minutes until it becomes frothy. Add the flour and salt, mixing until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Pretzel Bites
Preheat your oven to 450°F (232°C). Once the dough has risen, punch it down and turn it out onto a floured surface. Divide the dough into 8 equal pieces and roll each piece into a rope about 1 inch thick. Cut each rope into 1-inch pieces.

Boil the Dough
In a large pot, bring 10 cups of water and the baking soda to a boil. Drop the pretzel bites into the boiling water, cooking them for about 30 seconds on each side. Remove with a slotted spoon and place on a baking sheet lined with parchment paper.
