Prepare the Chicken
In a large bowl, combine the chicken thighs, Chiang Mai curry paste, coconut milk, lime juice, salt, and black pepper. Mix well to coat the chicken evenly. Cover and marinate in the refrigerator for at least 30 minutes.

Cook the Chicken
Heat vegetable oil in a skillet over medium heat. Remove the chicken from the marinade and cook for about 5-7 minutes per side, or until fully cooked and golden brown. Remove from heat and let it rest for a few minutes before slicing.

Assemble the Sandwich
Toast the brioche buns lightly. Place the sliced hot chicken on the bottom half of each bun. Top with sliced cucumber, sliced red onion, and fresh cilantro.
