Prepare the Ingredients

    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the spiral pasta and cook according to the package instructions until al dente. Drain and set aside.

    Dice the Tomatoes

    While the pasta is cooking, dice the fresh tomatoes and set them aside in a bowl.

    Chop the Cilantro

    Rinse the fresh cilantro under cold water, pat dry, then finely chop and set aside.

    Grate the Parmesan Cheese

    Grate enough imported Parmesan cheese to sprinkle over the finished dish. Set aside.

Cook the Shrimp

    Season and Sauté the Shrimp

    Heat a large skillet over medium-high heat. Add a drizzle of olive oil or butter. Add the six tail-on shrimp and season lightly with salt and pepper. Sauté for 2-3 minutes per side or until the shrimp turn pink and are cooked through. Remove and set aside.

Make the Chipotle Garlic Sauce

    Prepare the Chipotle Garlic Sauce

    In the same skillet, reduce heat to medium. Add a small amount of butter or oil, then add minced garlic and sauté for about 30 seconds until fragrant. Add chipotle peppers in adobo sauce (finely chopped or pureed, depending on preference) and stir. Add a splash of cream or reserved pasta water to thin the sauce slightly if needed. Simmer for 2-3 minutes to let the flavors meld.

Combine and Serve

    Combine Pasta and Sauce

    Add the cooked pasta and diced tomatoes to the skillet with the chipotle garlic sauce. Toss gently to coat all ingredients evenly.

    Add Shrimp

    Return the cooked shrimp to the skillet and mix gently to combine and heat through.

    Garnish and Serve

    Transfer the pasta and shrimp to serving plates. Sprinkle fresh chopped cilantro over the top and finish with a generous amount of grated imported Parmesan cheese. Serve immediately.
