Pork Preparation
Marinate the Pork
In a bowl, mix the achiote paste, citrus juice, minced garlic, and salt until well combined. Add the pork shoulder chunks and coat them thoroughly in the marinade. Cover and refrigerate for at least 4 hours, preferably overnight.
Braised Pork Cooking
Preheat the oven to 300°F (150°C). Place the marinated pork in a Dutch oven or a large oven-safe pot with a lid. Add a little water if necessary to prevent sticking. Cover and cook in the oven for about 3 hours or until the pork is tender and easily shredded.

Assemble the Tacos
Warm the corn tortillas in a dry skillet or microwave. Shred the cooked pork and place a portion on each tortilla. Top with the sautéed vegetables and serve with fresh lime wedges on the side.
