Preparation

    Prepare the Potatoes

    Peel and cube the potatoes. Boil in salted water until tender, about 15-20 minutes.

    Prepare the Romanesco

    Cut the romanesco into florets and blanch in boiling water for 3-5 minutes until bright green, then shock in ice water.

    Prepare the Shallots

    Finely chop shallots and set aside.

Cooking the Ribeye

    Sear the Steak

    Heat olive oil in a skillet over medium-high heat. Season ribeye with salt and pepper. Sear for 4-5 minutes on each side for medium-rare. Add garlic and thyme for the last minute.

    Add Bone Marrow

    In the last few minutes of cooking, add bone marrow to the skillet to warm through.

Finishing Touches

    Make Mashed Potatoes

    Drain potatoes and return to pot. Add butter, milk, salt, and pepper. Mash until smooth and creamy.

    Serve

    Plate the mashed potatoes, top with ribeye, bone marrow, and blanched romanesco. Garnish with sautéed shallots.
