Method
Duck Breast

Prepare Duck Breast
Score the skin of the duck breasts in a crisscross pattern, being careful not to cut into the meat. Season both sides with salt and black pepper.

Saffron Cauliflower Purée

Cook Cauliflower
In a pot, bring salted water to a boil. Add cauliflower florets and cook until tender, about 10-12 minutes. Drain and set aside.

Blend Purée
In a blender, combine cooked cauliflower, saffron, heavy cream, butter, and salt. Blend until smooth and creamy. Adjust seasoning as needed.
Roasted Brussels Sprouts

Prepare Brussels Sprouts
Preheat the oven to 400°F (200°C). Trim the ends of the Brussels sprouts and cut them in half.

Roast Brussels Sprouts
Toss Brussels sprouts with olive oil, salt, and black pepper. Spread them on a baking sheet and roast for 20-25 minutes until golden and crispy.

In a small bowl, mix honey and red chili flakes. Adjust spiciness to taste.
