    Prepare the Broth

    In a large pot, heat the olive oil over medium heat. Add the grated ginger and finely chopped lemongrass, cooking for 2-3 minutes until fragrant.

    Add Liquid Ingredients

    Pour in the chicken or vegetable broth and stir in the tamarind paste. Bring to a simmer and let cook for about 10 minutes to allow the flavors to meld.

    Cook the Bok Choy

    Add the bok choy to the broth and simmer for an additional 5 minutes until the bok choy is tender but still vibrant green.

    Cook the Salmon

    While the bok choy is cooking, season the salmon fillets with salt and black pepper. In a separate pan, heat a little olive oil over medium-high heat and sear the salmon for about 4-5 minutes on each side, or until cooked to your liking.

    Serve

    In a bowl, place a portion of the bok choy and broth, and top with the seared salmon. Garnish with chopped scallions and serve immediately.
