Method

Grilling the Octopus

    Prepare the Octopus

    In a large pot, bring salted water to a boil. Add the octopus and simmer for about 30-40 minutes until tender. Remove and let cool.

    Marinate

    In a bowl, mix olive oil, minced garlic, lemon juice, salt, black pepper, and paprika. Add the cooled octopus and marinate for at least 1 hour.

    Grill

    Preheat the grill to high heat. Grill the octopus for about 3-4 minutes on each side until charred and crispy.

Roasting the Potatoes

    Prepare the Potatoes

    Preheat the oven to 200°C (400°F). Cut the baby potatoes in half and place them in a bowl.

    Season

    Drizzle with olive oil, add rosemary, thyme, lemon zest, salt, and black pepper. Toss to coat evenly.

    Roast

    Spread the potatoes on a baking sheet in a single layer and roast for 30-35 minutes until golden brown and crispy.

Making Chutney and Yogurt

    Prepare Green Chutney

    In a food processor, blend cilantro, mint, green chili, lemon juice, and salt until smooth.

    Prepare Dill Yogurt

    In a bowl, mix plain yogurt, chopped fresh dill, lemon juice, and salt. Stir until combined.
