Fresh Fruit

Method

Fresh Fruit

  1. 1

    Prepare strawberries

Rinse strawberries under cold water, hull and quarter them so pieces are bite-sized (about 1 cup after cutting). Drain in a colander.

  2. 2

    Prepare berries

Rinse blueberries, raspberries, and blackberries gently. Remove any stems or leaves and let them drain in the colander.

  3. 3

    Prepare other fruit

Peel and slice the kiwi, dice the mango into small cubes, and halve the grapes if large. Combine kiwi, mango and grapes with the prepared berries in a large mixing bowl.

Dressing & Finish

  1. 4

    Make the citrus-honey dressing

In a small bowl, whisk together the fresh lemon juice, honey or maple syrup, orange zest, a pinch of sea salt and a pinch of freshly cracked black pepper until combined and honey is dissolved.

  2. 5

    Toss fruit with dressing

Pour the dressing over the bowl of mixed fruit. Gently toss with a large spoon or spatula 8–10 times, careful not to crush the berries. Taste and adjust sweetness or acidity: add up to 1 additional teaspoon honey or 1 teaspoon lemon juice if needed.

  3. 6

    Add herbs and nuts

Fold in the finely chopped fresh mint. If using, sprinkle the toasted almonds or chopped pistachios over the top and gently toss once to distribute.

  4. 7

    Rest and serve

Let the fruit salad rest for 10 minutes at room temperature to allow flavors to meld, then serve chilled or at room temperature. Store leftovers covered in the refrigerator for up to 48 hours—stir gently before serving.
