Method
Wings — Prep & Roast
Preheat and prepare
Preheat oven to 425°F (220°C). Line a rimmed baking sheet with foil and place a wire rack on top. Pat the wings very dry with paper towels—this is important for crispness.
Season wings
In a large bowl, combine the baking powder, kosher salt, black pepper, and neutral oil. Add the wings and toss until evenly coated. The baking powder helps dry the skin and create a crisp exterior.
Arrange and roast
Arrange wings in a single layer on the wire rack, leaving space between pieces. Roast on the middle rack for 20 minutes, then flip each wing and roast an additional 15–20 minutes until deep golden brown and internal temperature reads 165°F (74°C) and skin is crisp. Total roasting time ~35–40 minutes depending on size.
Optional broil
If you want extra crispness, broil on high for 2–3 minutes after roasting—watch closely to avoid burning.
Chipotle Honey Sauce
While wings roast, combine honey, minced chipotle in adobo, lime juice, smoked paprika, apple cider vinegar, butter, and salt in a small saucepan over low heat. Warm gently and whisk until butter melts and sauce is glossy, about 2–3 minutes. Remove from heat. Taste and adjust heat or acidity if needed (add more chipotle for heat or more honey for sweetness).
When wings are done, transfer desired number of wings to a large mixing bowl. Pour warm chipotle honey sauce over wings and toss to coat evenly. Serve immediately with lime wedges.
Carolina Gold BBQ Sauce
Whisk together yellow mustard, apple cider vinegar, honey (or brown sugar), Worcestershire sauce, smoked paprika, hot sauce (if using), and salt in a small bowl. Adjust for sweetness or tang as needed.
Mediterranean Dry Rub Finish
Combine oregano, thyme, garlic powder, onion powder, lemon zest, sea salt, black pepper, and olive oil in a small bowl to form a coarse paste.
While wings are hot from the oven, place the portion you want to finish with Mediterranean flavor into a bowl and toss with the rub mixture so the oil and lemon zest help the spices adhere. Sprinkle with chopped parsley before serving.
Serve
Arrange wings on a platter separated by flavor if serving multiple varieties. Provide extra sauce (Chipotle Honey or Carolina Gold) and lime wedges. Let wings rest 2 minutes before serving so sauces set slightly; serve hot.
